Three ingredients, you heard it right.
- 1 cup of peanut butter, smooth is best
- 1/2 cup of sugar
- 1 egg
Mix these THREE ingredients in a bowl. It doesn’t even matter how you mix it because this is part of the genius. For the sake of argument, I will suggest a spoon and also recommend that you mix until the ingredients are well blended.
The dough will be a little wet at this point so rather than rolling the dough into balls, I use a spoon to pick up the dough (about 1 tbsp) and another spoon to push it off in a roundish blob onto parchment paper or a greased cookie sheet. Also, I know you don’t believe that these little dreams will become full fledged cookies- just trust me. Flatten with a fork dipped in sugar to get that traditional-tons of ingredients-peanut butter cookie-look and bake.
Bake for about 20 minutes at 325 or until lightly browned. Set a timer though, these cookies don’t want to be baked into desiccation.
Let them rest for 5 minutes on a cookie sheet and place on wire racks. As these cookies cool, they will get firmer.
