Our family needs chicken nuggets to be happy. It is a scientific fact.
I found this recipe on Pinterest and (before you judge me) it is the easiest, tastiest chicken nugget recipe ever. The original recipe can be found here at the Chex website. I have made this recipe many times and have modified it to suit our taste. Trust me, our version is super duper.
- 3 cups Rice Chex* cereal
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic salt
- 1/4 tsp paprika
- 1/8 tsp garlic powder
- 3 tbsp butter, melted
- 1 tbsp milk
- 1 lb boneless, skinless chicken breasts, cut into 1×1-inch (2.5 cm x 2.5 cm) pieces
Heat oven to 400ºF. Lightly spray a dark baking sheet with oil.
Crush cereal. To easily crush cereal, place in plastic bag or between sheets of wax paper, and crush with rolling pin.
In medium bowl, stir together crushed cereal, cheese, garlic salt, paprika and garlic powder. Don’t get all Hulk-like and pulverize the cereal. You want to maintain some texture or the coating doesn’t stick as well. And really, what good is a chicken nugget without the coating?
In small bowl, stir together melted butter and milk. Dip chicken into butter mixture, then roll in cereal mixture to coat evenly. Place on baking sheet.
Bake 9 minutes; turn nuggets over. Bake about 8 minutes longer or until coating is light golden brown and chicken is no longer pink in centre.
Make dipping easy: Use one hand for butter dipping and dropping chicken into cereal mixture, then the other hand for cereal dipping and turning.
